Entering the canteen cattle shed after classes, I wondered what it would be like not to have noodles. In Zhengzhou, variety is not the spice of life, the chili powder they heap on every dish takes that title, but I thought it might be interesting to see what was on offer at some of the other serving hatches...
My face lit up when I saw that the next vendor along had a big bowl of chips! Real chips at that! Chipped potatoes, with the skin on, already fried, ready to be thrown back in a hot wok briefly, and served with salt, or ketchup or mayo. The possibilities running through my mind were endless.
